Blog Hopping - Red, White and Blue Blog Hop

Today's my anniversary and my DH says I don't have to cook all day.  Hmmmm, I hope that doesn't mean this is a "fast day".  I'm hoping for a "feast day".  Funny how similar those two phrases are.  See you later.  Enjoy the "hop".

Pantry Recipes

The last two posts, Warm Bean Salad and Chili Rellenos Casserole, are part of my new effort to find creative ways to use my food storage and pantry.  I want to do more than just open a can and nuke it, you know what I mean?



My DH's dear mom gave us a cookbook, American Family Home, which was published in the 1950's and I have a Gladys Taber 1948 cookbook.  Both of these are good on using pantry items and eggs as main dishes.  Published before the microwave and the supermarket, the recipes often use things that can be found most anywhere and which can be stored in your pantry such as canned seafood, vegetables, soups, fruits, etc.

The AFH has a whole bunch of meringue dessert recipes which are low fat and low sugar.  Working with meringue is my next project and I'll share with you when I have some success.



Out here on the prairie, we are 35 miles from any community of size and only two of those have a grocery store larger than our own, which means our choices are limited.  However, our grocer will order case lots of anything for us and we do a lot of that kind of buying throughout the year.

Also, we are members of Shelf Reliance where we budget monthly shipments of freeze-dried items which are very yummy and have a great shelf-life.  Some upcoming recipes:  Mini Salmon Loaves, Cool Green Bean Salad, Strawberry Shortcake, Layered Bean Dip.  All these use freeze-dried or pantry items.  I hope you all have a great Sunday (or Sonday, as they say on Prairie Flower Farm).

Warm Bean Salad

Warm Bean Salad


2 cans (15 oz. ea.) White Beans (Great Northern, Cannellini or Navy), drained and rinsed
1 large Onion, chopped fine
3 cloves Garlic, minced
1 Bell Pepper (green, red, or yellow), chopped
2 T. Bacon Bits
1 c. Ham, Spam or Bacon, chopped




Cut the ends of the onion, then, score the outer layer of flesh, through the skin.  Peel the skin off and cut in half vertically with the root end on top.


Put the onion cut side down on your work surface and stab it at the root end with a corn holder.  Use a paring knife to cut slits in the onion beginning about 1" from the root end.


The corn holder will keep it together as you, then, slice thinly across your slits, making a fine chop.


I'm using yellow bell pepper which I cleaned, sliced and froze a while back.  It's still a little frozen which makes it fairly easy to chop.


I peeled and sliced the garlic lengthwise.....


then, cut across with a paring knife to mince them.  Watch your pinkies!


Saute the garlic, onion and pepper in a tablespoon of Olive oil....


add the bacon bits and ham (I used SPAM)....


and cook until onions are translucent and all is fragrant.  Take from heat and set aside. 


The Sauce

1/2 t. Red Pepper Flakes (or to taste)
1/2 t. dry Oregano
1 t. Smoky Paprika or 1/4 t. Chipotle Powder (optional)
2 T. pure Maple Syrup
2 T. Apple Cider Vinegar
1 T. Worcestershire Sauce
 2 T. Brown Sugar
2 T. Black Strap Molasses
2 T. Prepared Mustard



Put the mustard, brown sugar, maple syrup, worcestershire sauce, molasses, red pepper flakes, oregano and smoky paprika in a small bowl and


whisk until well combined.


Place the beans in a 2 quart casserole dish and...


add the sauce....


and the onion mixture....


and mix well.


Heat at 325 degrees F for about 30 minutes until all is heated through and steamy.  Serve it hot or let it set until it reaches room temperature, if you like, or serve it chilled.  It's always better the second day.  We love this salad in the summer and hope you will, too.

Chili Rellenos Casserole



Chili Rellenos Casserole

1 can Enchilada Sauce, Mild
2 small cans Green Chilies
2 cups Shredded Cheese
6 Crepes


Gather your ingredients.  I made my crepes a few weeks ago and froze them.  I will show you, soon, how to make crepes.  I know this is a little different approach to Chili Rellenos but it is my attempt to duplicate the dish as it was presented to me years ago by a Mexican cook in a little restaurant I used to visit.  I like the egginess of the crepes and they're a little lower in carbs than flour or corn tortillas.

Rinse and drain the chilies.  You can remove all the seeds, if you like.  I leave some in because I like how spicy they are.



Put a couple of tablespoons of sauce on a plate.


Place the crepe on the sauce and swirl it around to coat it....


then, flip it and swirl it some more.  This gets pretty messy, so keep a damp cloth close by to keep your fingertips clean....especially if you are trying to snap pictures while you work, ha, ha.


Open the chili and lay it on the crepe.


Sprinkle some cheese on it.  You could also use a slice of cheese, if you like.  I didn't have slices today.


Roll it up and.....


place it in your dish, seam side down....


and keep going until you fill the dish.


Pour the remaining echilada sauce over the top....


and sprinkle on the rest of the cheese.  You're all done.


Today, we're having these with Warm Bean Salad and lettuce greens.  Just heat the Rellenos until they are hot and bubbly at about 325 degrees F. for about 30 minutes.  We love these and hope you will enjoy them too.  If you don't want to make crepes (who does when its 90 degrees outside?), just use flour or corn tortillas.

End of the Week and New Patterns

I'm giving you all a sneak peak at some new patterns coming down the road.  It's the end of the week here on the prairie.  We got sunburned weeding the garden earlier this week, discovered a family of skunks living under our neighbor's storage shed, and managed to get some finished quilts photographed properly, for a change.  It's quite hot today and will be in the 100's by Sunday (humidity about 12%).

Here's the first pattern, for Christmas.  This is just the computer version of it but the yardage and cutting instructions are all done.  It's called "Santa Claus" (isn't that original?), for now.




And another pattern, for Autumn, called, for now, "Harvest Time".  This may be three patterns in one, what do you think?  Again, this is just the drawing.....not the finished sample, yet.  



I'm sorry to have to mess these up a little with the copyright.  I'm supposed to have a watermark on them but haven't finished the confirmation on that yet.  Should be done in a couple of days, though.

Time to stop working, though, and put the feet up for a while.  Thinking about what to fix for the weekend meals to keep everyone going forward and happy.  Hmmmm.......tomorrow, we'll cook something together, eh?  I've been thinking of a bean salad and/or maybe Chile Rellenos.
